Ingredients:
2/3 cup flour
1 cup sugar
3 eggs
1/4 tsp. baking soda
3/4 Tbl. cinnamon
2/3 cup canned pumpkin
Instructions:
Combine all ingredients. Pour into a well greased jelly roll pan (a cookie sheet with a lip) Bake for 15 min at 350°. While still warm, flip onto powdered sugar sprinkled wax paper. Let cool for 15 min.
Cream Cheese Filling:
3 Tbl. butter
1 cup powdered sugar
1 1/2 pkg. cream cheese (12 oz.)
Vanilla to taste

Cream together. Spread on the bread and use the wax paper to roll the Pumpkin Roll. (Use dental floss to slice pieces of the roll)
