Walking Tacos

Ingredients: Fritos (w/ individual-sized bag) 1 can chili Shredded cheese Sour cream Instructions: Warm chili in saucepan on stove. Open Fritos bag and scoop desired serving size into the bag on top of the chips. Add sour cream and cheese. Shake together and eat from the bag. (Can also use family size bag of chips and eat with a bowl inside of out of the bag)

Emergency Chicken

 Ingredients: (2 servings) 1 Tbl butter 2/3 cup barbeque sauce 1 Tbl Worcestershire sauce 2/3 tsp garlic powder 1 1/2 lbs skinless, boneless chicken pieces - cut into 1/2 inch Instructions: Melt butter in a saucepan over medium heat. Stir barbeque sauce, Worcestershire sauce, and garlic powder together with the melted butter. Stir chicken into the sauce mixture to coat. Place cover on saucepan and simmer until the chicken pieces are cooked through and no longer pink in the middle, 3 to 5 minutes. Remove cover and spoon sauce over chicken pieces; continue cooking until sauce thickens, about 4 minutes more.

Scrambled Eggs in a Mug

 Ingredients: 1 egg 1 Tbl milk 1 pinch ground black pepper (optional) Instructions: Crack egg into microwave-safe mug. Beat until even in collor. Pour in milk and beat until light yellow in color. Heat in microwave until cooked thoroughly and fluffy, about 90 seconds. Sprinkle pepper over egg.

Tuna Melt

 Ingredients: 2 cans tuna 1/3 cup mayo 1 cup shredded cheese 2 slices bread/ English muffin Instructions: Preheat broiler and set rack 4-5 inches from heat source. Mix tuna and mayo (and other options as well). Spread on top of bread slices. Top with cheese and place on baking sheet under broiler. Heat for 3-5 minutes until cheese has melted. Serve immediately.

Baked Teriyaki Chicken & Rice

 Ingredients: 1/2 Tbl cornstarch 1/2 Tbl cold water 1/4 cup white sugar 1/4 cup soy sauce 2 Tbl cider vinegar 1/2 tsp garlic, minced 1/4 tsp ground ginger 1/8 tsp ground black pepper Boneless, skinless chicken breast cut into strips Instructions: 1. In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger, and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubble. 2. Preheat oven to 425* 3. Place chicken pieces on parchment paper in a jelly roll pan. Brush chicken with sauce. 4. Bake in the preheated oven for 10 minutes. Turn pieces over, brush with sauce and bake for another 10 minutes , until no longer pink and juices run clear. Rice (4 servings): 1 cup rice 2 cups water In a saucepan, combine all ingredients. Bring to boil. Turn heat down low and cover with lid. Simmer 15 minutes or until all water is absorbed.

Pizza

 Makes one 14 inch thick crust, two 12 inch thin crust, or four or five personal pizzas Ingredients: 3 cups all-purpose flour Mozzarella cheese 1 pkg. yeast (2 1/4 tsp) Toppings (pepperoni) 1 Tbl sugar 1 tsp salt 1 cup lukewarm water (110-115*) 2 Tbl oil 1 Tbl cornmeal (for pan) Instructions: 1. Preheat oven to 425* 2. Start with 2 cups of the flour and put it in a large mixing bowl. Add 1 tsp salt and 1 tablespoon sugar to this flour mixture and stir 3. In a liquid measuring cup, measure 1 cup of lukewarm water. Add the yeast packet to the warm water in the measuring cup and stir to dissolve. Add 2 tablespoons of oil to the water and yeast mixture. 4. Add the water mixture to the 2 cups of flour. Stir until the ingredients are blended. Add in additional flour, stirring until dough pulls away from the sides of the bowl. **You may not use all the extra flour** 5. Cream Cheese Chicken

Ingredients: 1 pkg. cream cheese 1 can cream of chicken soup 1 pkg. Good Seasons Italian Seasoning mix 1 can chopped green chilies (optional) 2 lbs. chicken breasts or tenders Instructions: Mix together and put in crockpot on low for 6-8 hours, or until chicken is cooked through. Shred chicken, mix all together and serve over rice or noodles.

Stuffed Honey-Ham Biscuits

Ingredients: 1 can (16.3 oz.) Pillsbury Grands! Flaky Layers refrigerated Original biscuits 8 slices (1/2 oz each) Swiss cheese 8 slices (1 oz each) deli cooked ham 1/4 cup honey Instructions: Heat oven to 350°F. Spray cookie sheet with cooking spray. Separate dough into 8 biscuits. Separate each biscuit into 2 layers, making total of 16 biscuit rounds. Fold each piece of cheese in half. Fold each piece of ham into fourths. Place 1 folded slice of cheese and 1 folded slice of ham on 1 biscuit round. Top with another biscuit round; firmly pinch edges to seal. Repeat with remaining cheese, ham and biscuits to make 8 sandwiches. Place on cookie sheet. Bake 15-20 minutes or until golden brown. Remove from cookie sheet to serving plate. Drizzle honey over biscuits. Serve immediately.

Petite Lasagnas

Ingredients: 12 oz. ground turkey breast 1/4 tsp salt 1/4 tsp pepper 1 cup chopped onion 1/2 cup chopped mushrooms 1 (15 oz) can crushed tomatoes, or tomato sauce 2 garlic cloves, minced 3 tsp dried oregano 1/2 tsp dried basil 1 1/2 cup part-skim ricotta cheese 24 small square wonton wrappers (find them in the refrigerated section of the produce dept.) 1 1/2 cups shredded Mozzarella cheese Instructions: Preheat oven to 375°F. Spray a large nonstick skillet with cooking spray and set over medium heat. Add the ground turkey, onions, mushrooms, salt, and pepper, and cook, crumbling the turkey with a wooden spoon as you go, until the turkey is browned, about 8 minutes. Add the garlic and cook, stirring constantly, until fragrant, 30 seconds. Add the crushed tomatoes and 2 tsp of the oregano. Bring the pan to a simmer. Tomato-Tortellini Soup

Ingredients: 2 (14 1/2 oz) cans chicken broth or vegetable broth 1 (9 oz) pkg. refrigerated cheese-filled tortellini 1/2 of an 8 oz. tub cream cheese spread with chive and onion 1 (10.75 oz or 11 oz) can condensed tomato or tomato bisque soup Snipped fresh chives (optional) Instructions: In a medium saucepan bring broth to boiling. Stir in tortellini. Return to boiling; reduce heat. Simmer, uncovered, for 5 minutes. Gradually whisk about 1/3 cup of the hot broth into cream cheese spread until smooth. Stir cream cheese mixture into broth in saucepan. Gradually stir in tomato soup; heat through. If desired, sprinkle each serving with chives.

Tomato Basil Parmesan Soup

Ingredients: 2 (14 oz.) cans diced tomatoes, with juice 1 cup finely diced celery 1 cup finely diced carrots 1 cup finely diced onions 1 tsp dried oregano or 1 Tbl. fresh oregano 1 Tbl. dried basil or 1/4 cup fresh basil 4 cups chicken broth 1/2 bay leaf 1/2 cup flour 1 cup Parmesan cheese 1/2 cup butter 2 cups half and half, warmed (or skim milk if you're trying to cut some calories) 1 tsp salt 1/4 tsp black pepper Instructions: Add tomatoes, celery, carrots, chicken broth, onions, oregano, basil, and bay leaf to a large slow cooker. Cover and cook on LOW for 5-7 hours, until flavors are blended and vegetables are soft. About 30 minutes before serving prepare a roux. Melt butter over low heat in a skillet and add flour. Stir constantly with a whisk for 5-7 minutes. Slowly stir in 1 cup of hot soup. Add another 3 cups and stir until smooth. Add all back into the slow cooker. Stir and add Parmesan cheese, warmed half and half, salt and pepper, Add additional basil...

Ham and Cheese Sliders

Ingredients: 24 white dinner rolls 24 pieces honey ham 24 small slices Swiss cheese 1/3 cup mayo 1/3 cup miracle whip Poppy Seed Sauce: 1 Tbl. poppy seeds 1 1/2 Tbl. yellow mustard 1/2 cup butter, melted 1 Tbl. minced onion 1/2 tsp Worcestershire sauce Instructions: In a small bowl, mix together mayo and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together. In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. (You don't have to use all of the sauce, just enough to cover the tops.) Let sit for 10 minutes. Cover with foil and bake at 350° for 12-15 min or until cheese is melted. Uncover and cook for another 2 min, or until tops are slightly brown. Serve warm.

Taco Seasoning

Ingredients: 1/2 Tbl. chili powder 1/4 tsp garlic powder 1/4 tsp oregano 1/2 tsp paprika 1 1/2 tsp cumin 1 tsp black pepper Instructions: Mix together. *Equals about 1 store bought package.

German Pancakes

Ingredients: 6 Tbl. butter 6 eggs       1 cup flour   1 cup milk Instructions; Place butter in 8x8 pan and put in the oven while it is preheating. Mix the eggs, flour, and milk together in a blender. When the oven is done preheating, pour the mixture into the pan, with the now melted butter. Bake for 20-23 min at 400°.

Garlic Chicken

Ingredients: 6 chicken breasts 1 cup mayo 1 cup Kraft shredded Parmesan cheese 1 Tbl. parsley 1 clove garlic per breast Instructions: Mix mayo, cheese, parsley, and garlic. Pour over chicken breasts. Bake for 30 min at 350°.

Funeral Potatoes

Ingredients: 1 pkg. Hash Browns onion (chopped) 1 can cream of chicken  2 cups grated cheese 2 cups sour cream 1/2 cup butter Instructions: Place thawed hash browns in a 9x13 pan. Sauté onion in butter (Melt butter in skillet on med/high. Once melted, put in finely chopped onion. Mix until onion is transparent, and maybe a bit brown on the edges). Add cream of chicken, cheese, and sour cream. Once cheese is melted, pour over hash browns- stir. Bake for 20-25 min (add 15 min if in a Polish pottery pan) at 350°.

Broccoli Rice Casserole

Ingredients: 1 cup dry Minute Rice 1/4 cup butter 1 onion, chopped 1 can cream of chicken soup 1/2 cup milk 1/4 cup water 1 (8 oz.) grated cheese 1 (8-16 oz.) pkg. broccoli, chopped, cooked, and drained (frozen or fresh) Instructions: Saute rice and onion in butter in skillet. Add soup, milk, water, and cheese. Cook until smooth. Then add cooked broccoli. Place in an ungreased 8x8 inch pan dish. Bake, uncovered, 30-40 min. at 350°.

Susan Blackham's Lasagna

Ingredients: 1 1/2 lb. lean ground beef 1 tsp. garlic powder 1 1/2 Tbl. basil 1 1/2 tsp. salt 1 (16 oz.) can tomatoes 1 (12 oz.) can tomato paste 2 eggs 1 cup grated Parmesan cheese 3 Tbl. parsley flakes 3 cups cottage cheese 1/2 tsp. pepper 1 tsp. salt 1 1/2 lb. Mozzarella cheese 6 lasagna noodles Instructions: Brown the beef, then add garlic powder, sweet basil, 1 1/2 tsp. salt, tomatoes (cut), and tomato paste. Simmer for 30 min. In a large bowl, combine beaten eggs, Parmesan cheese, parsley, cottage cheese, 1 tsp. salt, and pepper. Cook and drain noodles. Grate Mozzarella cheese. In a 9x13 inch pan, place half of the noodles, half of the cottage cheese mixture, then half of the mozzarella cheese, then half of the meat mixture. Repeat the layers. Bake at 375° for 30-60 min. until hot throughout.

Meat Balls

Ingredients: 2lbs. ground beef 1 (6 oz.) pkg. Stove Top Stuffing 2 eggs 3/4 cup barbecue sauce 1/2 cup grated cheddar cheese Instructions: Mix beef, stuffing, eggs, and barbecue sauce (1/2 cup). Fill greased muffin cups with mixture. Top meat balls with remaining barbecue sauce. Bake for 30 min at 400°. Top with cheese and bake for 5 more minutes.
